Easy Freezy Muffins
I bought a Wilton miniature muffin pan at Michael's yesterday. Today I made Apple Raisin mini muffins from a Paula Deen recipe. In the end I had 60 mini muffins. I am going to freeze most of them, thawing out five or ten at a time for snacks, breakfasts or to go in my daughter's lunch. Sure, it took a while to bake them because I only have the one pan but I could do other things in the 15 minute increments and I will have muffins for her for the next two months.

Strawberry Mice
I found this "recipe" in Family Fun magazine last spring. The ears are almond slices, the eyes and nose are black icing (from the cake decorating section at the grocery) and their tails can be a thin red licorice thread or just drawn on the doily with a permanent marker.

This class is geared towards packing for younger children but many of the ideas and suggestions can be adapted to fit your older children or even your own lunches.
A few simple principles are at the core of packing “bento style.” In this 45 minute long class we give you easy recipe ideas, edible garnishment suggestions, creative touches, rules of thumb and how to find supplies. $25 fee includes take away checklists and recipes.
